Cookies


Over the weekend I attempted to make caramels with the hope of packaging them up to send as gifts for a few occasions. Well, when people say making candy is difficult, they are not lying, at all. 

It took me three attempts to get it right, one batch was too soft (more like caramel sauce), the other too hard, and finally the last batch was just right. It was like the Goldilocks of caramels. 

I am never a fan of throwing away food, I am convinced most of it can be saved. But candy is much complicated. The too soft caramels were too far gone, but the ones that were too hard were perfect to crush up.

I could not find a hammer, or even a meat tenderizer, and knew that there were only a few things that would break the caramels without breaking whatever I was using. I improvised with a wooden roller used to roll out soar muscles and knots. It worked perfectly!

I made a batch of chocolate chip cookies, added the caramel bits, and viola! Delicious cookies and salvaged caramels!

I packed a few up for my parents to have as a snack on their flight this morning, froze the dough, and had a few (or more!) for a late night snack!
